Mac -n- Cheese

I'm still using up ingredients in my pantry, which I'll be able to do for a long time to come. Today I spied a great big bag of elbow macaroni, and I have a bunch of shredded cheddar so I searched Big Oven for a mac and cheese recipe and found this one. It worked perfectly because I found all of the ingredients in my pantry, and it tasted great.

I did let it simmer for too long in the crockpot, though because we were visiting friends today, but it was still good. Make sure not to overcook the macaroni. It should be just a bit crunchy before you put it in the crockpot.

Barbara's Macaroni And Cheese In Crock Pot

1 large box macaroni ; cooked, drained
2 tablespoon oil
2 sticks margarine
1 large can evaporated milk
1 cups milk
1 large onion ; chopped fine
3 cups grated Cheddar cheese - (12 oz)
1 can Cheddar cheese soup

-= Instructions =-
Oil crock pot, mix all ingredients, using only 1/2 of the grated cheese. Put mixture in crock pot and put remaining cheese on top. Let simmer in crock pot for 4 or more hours.

Coffee Cake

We were in the mood for something sweet, so I tried this recipe. It was good and very simple to make. Less expensive than an evening run to the store for munchies.

Aunt Phyllis Good Sour Cream Coffee Cake

1 c Sour cream
1 ts Baking soda
1/2 c Butter or margarine
1 c Sugar
2 Eggs
1 ts Vanilla
1 3/4 c Flour
2 ts Baking powder
1/2 c Brown sugar
1 ts Cinnamon
1/2 c Nuts

Beef Fajitas

Another family favorite. We're having to really save money this month (Isn't everyone?) so, I'm gonna have to get creative and use what's in the freezer and pantry. I love this recipe because it's tasty and I can make it in the crockpot. It's so nice to have dinner ready in the evening with just a little prep work in the morning.

I'll serve this with a couple of boxes of mexican style rice I have in the pantry.

Beef Fajitas

1 pounds beef flank steak
1 cup Onion ; sliced
16 ounce Salsa
1 tablespoon cilantro
2 garlic cloves ; minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 can chopped tomatoes - (8 oz)
12 flour tortillas
Sour cream
Shredded cheddar cheese

Cut flank steak into 6 portions. Combine meat, onion, green sweet pepper, jalapeño pepper, cilantro, garlic, chili powder, cumin, coriander and salt in crock-pot. Add tomatoes. Cover nd cook on LOW for 8 to 10 hours or on HIGH 4 to 5 hours.

Remove meat from slow cooker and shred. Return meat to slow cooker. Stir.

To serve fajitas, spread meat mixture into flour tortillas and add toppings if desired. Roll up tortillas.

This recipe yields 12 servings.

Beanless Chicken Chili

More turkey leftovers! My kids loved this meal. I served it with crushed tortilla chips and cheddar cheese sprinkled in the chili with a blob of sour cream. (blob is a technical cooking term, let me know if you need further instructions. grin.gif )

2 tablespoons olive oil
1 large onion -- chopped
4 cloves garlic -- pressed
1 red bell pepper - chopped ; (seeded and deribbed)
1 stalk celery -- chopped
2 jalapeno peppers - chopped ; (seeded and deribbed)OPTIONAL
1 -2 teaspoons ground cumin
2 teaspoons ground coriander
1/2 teaspoon cayenne pepper
salt ; and pepper to taste
1 28-ounce can tomatoes -- broken up
6 boneless skinless chicken breast halves -- cooked and chop

4 -6 cups cooked turkey ; chopped
2 tablespoons fresh cilantro -- chopped
Juice ; of one lim

In a large saucepan or skillet, heat oil over medium heat. Sauté
onion, garlic, celery, peppers and seasonings over medium low heat
for about 5 minutes.

Add tomatoes. Simmer gently for 20 minutes. Stir in cooked chicken
and/or turkey and cook until heated through. Before serving, add lime
juice and fresh cilantro and stir gently.

Turkey Nachos

Last night we had a turkey dinner with all the fixin's. Now, we have turkey leftovers. Mike likes turkey sandwiches for lunch, and tonight we are having turkey nachos for dinner. Recipe courtesy of Leanne Ely at Check her out!

Turkey Nachos

3 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon garlic powder
2 cups coarsely chopped cooked turkey
1 10ounce bag large-size white ; yellow, or blue tortilla
1 16ounce can refried beans
2 cups shredded Monterey Jack or Cheddar cheese
(8 ; ounces)
1 16ounce jar prepared salsa
Salt ; and freshly ground pepper to taste
Sour ; cream and fresh cilantro sprigs to

Heat oven to 425 degrees.

Whisk together lime juice, olive oil, cumin and garlic powder; toss
with turkey in a small bowl and season with salt and pepper.

Make a layer of tortilla chips to cover the bottom of a large 12 to
14-inch round or oval baking dish. Evenly spoon refried beans over
chips (use the entire can of beans). Top with turkey and sprinkle
with 1 cup shredded cheese.

Make another layer of tortilla chips. Spoon half the salsa evenly
over chips. Top with remaining cup of cheese.

Bake nachos until heated through and cheese melts and begins to
bubble, 15 to 20 minutes. Serve hot with remaining salsa, sour cream
and cilantro, if desired.
