| how I became a vegetarian |

| My name is Rebecca. I am a masters student in library and information science at Drexel, and I have been a vegetarian for three years. I had thought about going vegetarian for many years prior, but I didn't know anything about cooking and I wasn't quite sure what you were supposed to eat if you excluded meat from your diet. I ended up a vegetarian sort of by accident. I attended a college not known for its food, and the dining hall meals that didn't contain meat seemed somewhat safer than the rest. After a few months of not eating meat, I realized I was happier this way, but I still didn't know how to prepare vegetarian food for myself. When I got kicked out of my dorm for the summer, I was forced to learn how to cook. I started with simple, hard-to-ruin recipes like Chickpea Curry and eventually worked up the courage to adapt my favorite recipes to fit my tastes. I hope you enjoy these recipes as much as I do. |

| tropical cashew muffins (vegan) |

| This is the first recipe that I successfully veganized. I also replaced the papaya with a bag of frozen tropical fruit for taste and convenience. Based on this recipe Makes 12 muffins Ingredients: * 3/4 cup canola oil * 1 cup sugar * 1 overripe medium banana, well-smashed * 1 teaspoon vanilla * 1/2 teaspoon salt * 2 cups flour * 3/4 teaspoon baking soda * 3/4 teaspoon ground cinnamon * 1/8 teaspoon ground ginger * 2 cups chopped frozen tropical fruit (I use Trader Joe's Frozen Mango, Papaya and Pineapple) * 1-1/4 cups lightly salted roasted cashew nuts (pieces will work better than whole nuts) Directions: 1. Let the frozen fruit thaw for as long as possible before baking, and then dice it. (The longer you wait, the easier it will be to dice.) 2. Preheat oven to 400. Put 3. In a large bowl mix oil and sugar, then add banana and vanilla and mix. 4. In another bowl stir together flour, baking soda, salt, cinnamon and ginger. 5. Add dry mix to wet mix, then stir to just combine. 6. Stir in fruit and cashews, then spoon batter into pans. 7. Bake about 25 minutes. Note that these muffins brown quickly and will look done after a very short amount of time. You may want to stick a fork in the center to make sure they are cooked though. 8. Cool 5 minutes before removing from pans. |

| goal for my site |

| My goal is not to convince people to give up meat or other animal products. There will be no horrifying photos of lab rabbits or suffering farm animals. Rather than focusing on the negatives of eating meat, I want to focus on the good things about vegetarianism, like tasty, nutritious food. I would like my site to be as inclusive as possible and to appeal to a wide-range of users, not just vegetarians. I believe that any steps you can take to reduce the amount of animal products you consume are good for your health and good for the planet. My site will offer users some ideas for how to do so. |

| The following are some websites that I find useful when I'm looking for recipes, and I plan to include them as a list of links on my own site. As I create my website, I will look at the features I like on these sites, and try to incorporate those features into my own design. Allrecipes, http://allrecipes.com/Default.aspx : A great site for finding any type of recipe, vegetarian or not. The search function allows you to search by ingredients to include or exclude, and you can limit your search to recipes in the site's vegetarian collection. The Post-Punk Kitchen, http://www.theppk.com/ : This site belongs to Isa Chandra Moskowitz, who wrote Vegan with a Vengeance, my favorite veg*n cookbook. She includes a nice collection of vegan recipes, and updates the site with new recipes every month. Veg Recipes' Journal, http://community.livejournal.com/vegrecipes/ : This blog community is very active, with new recipes posted every day. Community members also post questions and requests for recipes, and these sorts of posts tend to get answered within a few hours of posting. |

| Chickpea Curry Recipe |

| Here is my recipe for chickpea curry. If any of the ingredients in my recipe end up being listed on my "Places to buy ingredients" page, I will turn those words into hyperlinks that reference that page. This recipe is vegan, meaning it contains no animal products. It is based on this recipe: http://allrecipes.com/Recipe/Chickpea-Curry/Detail.aspx . Ingredients: cooking oil (1-2 tbsp) 1.5 small-medium onions, chopped 2 spoonfuls chopped garlic (fresh or from a jar) 2 spoonfuls ginger (fresh or from a jar--not powdered ginger) 2 spoonfuls curry powder lots of cinnamon (maybe 3 spoonfuls?) ~45 oz. chickpeas (1 large can and one small can) 2 small cans diced tomatoes Heat oil in pan. Add onions, garlic, ginger, curry powder, and cinnamon, and fry until the onions start to brown. Add the chickpeas, including the liquid, and cook until most of the liquid has boiled away or the chickpeas are soft enough for your liking, whichever comes first. Add the tomatoes, cook for about one minute, and remove from heat. Serve with rice or flatbreads. Serves 8 |
