My name is Rebecca. I am a masters student in library and information science at Drexel, and I have been a vegetarian for three years. I had thought about going vegetarian for many years prior, but I didn't know anything about cooking and I wasn't quite sure what you were supposed to eat if you excluded meat from your diet. I ended up a vegetarian sort of by accident. I attended a college not known for its food, and the dining hall meals that didn't contain meat seemed somewhat safer than the rest. After a few months of not eating meat, I realized I was happier this way, but I still didn't know how to prepare vegetarian food for myself. When I got kicked out of my dorm for the summer, I was forced to learn how to cook. I started with simple, hard-to-ruin recipes like Chickpea Curry and eventually worked up the courage to adapt my favorite recipes to fit my tastes. I hope you enjoy these recipes as much as I do. |
