| Chickpea Curry Recipe |

| Here is my recipe for chickpea curry. This recipe is vegan, meaning it contains no animal products. It is based on this recipe: http://allrecipes.com/Recipe/Chickpea-Curry/Detail.aspx . Ingredients: cooking oil (1-2 tbsp) 1.5 small-medium onions, chopped 2 spoonfuls chopped garlic (fresh or from a jar) 2 spoonfuls ginger (fresh or from a jar--not powdered ginger) 2 spoonfuls curry powder lots of cinnamon (maybe 3 spoonfuls?) ~45 oz. chickpeas (1 large can and one small can) 2 small cans diced tomatoes Heat oil in pan. Add onions, garlic, ginger, curry powder, and cinnamon, and fry until the onions start to brown. Add the chickpeas, including the liquid, and cook until most of the liquid has boiled away or the chickpeas are soft enough for your liking, whichever comes first. Add the tomatoes, cook for about one minute, and remove from heat. Serve with rice or flatbreads. Serves 8 |
