| tropical cashew muffins (vegan) |

| This is the first recipe that I successfully veganized. I also replaced the papaya with a bag of frozen tropical fruit for taste and convenience. Based on this recipe Makes 12 muffins Ingredients: * 3/4 cup canola oil * 1 cup sugar * 1 overripe medium banana, well-smashed * 1 teaspoon vanilla * 1/2 teaspoon salt * 2 cups flour * 3/4 teaspoon baking soda * 3/4 teaspoon ground cinnamon * 1/8 teaspoon ground ginger * 2 cups chopped frozen tropical fruit (I use Trader Joe's Frozen Mango, Papaya and Pineapple) * 1-1/4 cups lightly salted roasted cashew nuts (pieces will work better than whole nuts) Directions: 1. Let the frozen fruit thaw for as long as possible before baking, and then dice it. (The longer you wait, the easier it will be to dice.) 2. Preheat oven to 400. Put 3. In a large bowl mix oil and sugar, then add banana and vanilla and mix. 4. In another bowl stir together flour, baking soda, salt, cinnamon and ginger. 5. Add dry mix to wet mix, then stir to just combine. 6. Stir in fruit and cashews, then spoon batter into pans. 7. Bake about 25 minutes. Note that these muffins brown quickly and will look done after a very short amount of time. You may want to stick a fork in the center to make sure they are cooked though. 8. Cool 5 minutes before removing from pans. |

| I am perpetually confused about the health aspects of oils. I thought canola oil was one of the "bad" ones? | ||
