Hiking food

Soon I plan to go to Guadalupe Mountains National Park to do a multi day backpacking trip. I think I've managed to get in shape and I've got everything I need except for food.
Normally I would just pack those, 'just add boiling water meals', but I have to carry all the water and water is heavy. 8lbs a gallon. I'm already planning to carry at least 2.5 gallons for drinking, so it starts to get heavy. I'm thinking about just bringing .75 gallons for every day since when hiking, I have never used more and usually around a half. It's a nice safety net, though, to have the extra.
So I have to find something light that is filling, loaded with calories, and doesn't need water. Tasty is good too. If I leave my stove behind, I can save a pound on it and the gas and I could probably leave behind utensils and cookware, saving some more weight.
